Guji coffee processing

At Guji Brew, coffee begins at the source. Our beans are grown on our own farms in the Guji region of Ethiopia, where coffee trees develop naturally within protected forest environments. We work closely with local farmers and carefully manage every step.

From cultivation and harvesting to processing and export. Only fully ripe red cherries are hand-picked and processed using both natural and washed methods. By controlling the process at origin, we ensure certified quality, sustainable farming practices, and distinctive flavors that reflect the character of Guji coffee.

We combine traditional expertise with careful quality control:

  • Harvest & Collecting: Hand-picked cherries are gathered and transported to the processing area.

  • Pulping, Fermentation & Washing: Beans are pulped, fermented, and washed to develop flavor while maintaining quality.

  • Drying & Sorting: Sun-dried on raised beds, beans are carefully sorted to remove defects.

  • Hulling, Grading & Packaging: Parchment is removed, beans are graded, and packed for storage and transport.

  • Roasting: Some beans are roasted locally in Ethiopia, others in Europe, depending on partner needs, ensuring optimal freshness.

From forest to cup, our hands-on approach, sustainable practices, and certified quality make each Guji Brew coffee a truly distinctive experience.
